One of the most famous knife maker in Seki, Japan is Hiro. The blades are made of professional grade VG10 stainless steel core clad in layers of Damascus, characterized by distinct wavy patterns of mottling and banding. Has a full tang handle made of Quince wood. This petty knife by Hiro is aesthetically impressive and a real work of art, (just take a look at the detail on the rivets), the blade edge are definitely sharp too. Used for chopping, slicing and dicing ingredients for soups, stews and vegetable platters, meat and fish. To maintain its sharp cutting edge, it is recommended to wash right after each use, dry and apply Camellia oil. Not to be washed and left overnight in the dishwashing machine. Oil is available and can be purchase separately.
