The Midorihamono vegetable knife is made with VG-10 steel, with a tsuchime (hammer mark) finish which shows how exquisitely each knife is in itself, a work of art. Aside from its aesthetic uniqueness, the hammer marks prevents food particles from sticking on the side of the knife. Vegetable knives are used mainly for mincing, slicing and dicing vegetables, and not to be used for any kind of meat or as a cleaver. The blade is strong against rust and easy to sharpen.
